I make these juicy, garlicky skewers when I want an easy weeknight dinner that still feels a little special. The buttery parmesan finish makes them a hit at backyard cookouts too.
Ingredients
Chicken
2 chicken breasts (about 1 lb), cut into bite-sized pieces (or use chicken thighs)
Olive oil
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Garlic Parmesan Butter
3–4 tbsp butter
4 cloves garlic, finely minced (or about 2 tbsp)
Pinch of red pepper flakes
2–3 tbsp fresh parsley, finely chopped
¼ cup grated parmesan cheese
Instructions
Preheat your oven to 425°F.
Toss the chicken with a drizzle of olive oil and season with the salt, pepper, paprika, garlic powder, and onion powder. Massage everything together until evenly coated.
If using wooden skewers, soak them in water beforehand to help prevent burning and splintering.
Thread the chicken onto the skewers.
Place the skewers on a wire rack set over a parchment-lined baking sheet to catch the drippings.
Bake for about 25-30 minutes, flipping the skewers halfway through or until they reach and internal temp of 165* F.
While the chicken bakes, melt the butter over low heat. Add the minced garlic and a pinch of red pepper flakes, cooking just until fragrant.
Remove from the heat and let cool for a minute or two before stirring in the parsley and parmesan.
Brush the garlic parmesan butter generously over both sides of the cooked chicken skewers and serve immediately.
