These Brazilian candies deliver a satisfying contrast of crunchy caramel shell and chewy coconut center that keeps you coming back for more. The magic happens when you caramelize the sugar just right, creating that glossy amber coating.
Ingredients
1 tbsp butter
1 (14 oz) can sweetened condensed milk
2/3 cup sweetened coconut flakes
1 cup granulated sugar
1/2 cup water
1 tbsp white vinegar
Instructions
Melt butter in a large pan over medium heat. Pour in the sweetened condensed milk and coconut flakes. Stir to mix, then cook, stirring occasionally, about 7 minutes. The mixture should form almost into a dough-like texture that easily pulls away from the pan.
Move the mixture into a bowl, cover, and place into the fridge to cool.
Line a baking sheet with parchment. Grease your hands, and roll the coconut mixture into ping pong sized balls. Place onto the parchment, then stick a toothpick into each one.
Heat a large pan over medium high. Pour in the sugar, water, and vinegar. Bring to a boil and cook for about 10 minutes, or until the mixture is amber colored.
Working quickly and carefully, use the toothpicks to dip each ball into the sugar mixture. Try to evenly coat them, then set each one back on the parchment.
Let cool, then enjoy! Store in the fridge for a few days.
Chef's tips
Work quickly when dipping the balls into the hot caramel since it hardens fast and can burn if left too long on the stove.
Use a candy thermometer to check for the hard-crack stage (around 300°F) for the crispiest caramel shell.
Keep a bowl of ice water nearby when making the caramel to test doneness by dropping a small amount in—it should harden instantly.
