Two ingredients, zero margin for error: a hard-frozen scoop of vanilla bean gelato drowned in coffee strong enough to taste like dessert. The trick at home is temperature control — glasses straight from the freezer, gelato scooped ahead and re-frozen, and espresso brewed to order in a stovetop moka pot so it hits the scoop at full heat. A sugared hazelnut crunch and a shower of shaved dark chocolate turn it into a proper after-dinner course.

Instructions

  1. Put the two serving glasses in the freezer at least 30 minutes ahead (an hour is better). Cold glass is the whole game — a room-temperature glass melts the gelato into coffee-flavored soup in under a minute.
  2. Make the hazelnut crunch: toast the hazelnuts in a dry skillet over medium heat, shaking often, for 5–7 minutes until fragrant and the skins darken and crack. Rub them in a clean kitchen towel to remove most of the skins, then return them to the skillet with the sugar and a pinch of kosher salt. Cook over medium, stirring constantly, for 2–3 minutes until the sugar melts and glazes the nuts. Scrape onto a sheet of parchment, spread out, and cool completely (about 10 minutes), then chop coarsely. Store airtight up to 3 days.
  3. Scoop ahead: working quickly with a scoop dipped in hot water, place two rounded scoops (about 1/2 cup total) of gelato into each frozen glass. Return the glasses to the freezer for at least 15 minutes so the scoops re-harden and the glass re-chills. Do not let the gelato soften on the counter.
  4. Brew the coffee: fill the moka pot base with hot water up to just below the safety valve, seat the funnel, and fill it with the 18 g of finely ground coffee. Level it with a finger — do not tamp. Screw on the top and set over medium-low heat.
  5. Brew until the pot gurgles and the stream turns pale and sputtery, about 4–5 minutes, then pull it off the heat immediately and run the base under cool tap water for 5 seconds to stop extraction. You want roughly 3–4 oz of thick, dark coffee total. If using sugar, stir the demerara into the hot coffee now until it dissolves.
  6. Serve at once: bring the frozen glasses to the table, top each with a scattering of hazelnut crunch, a few shavings of dark chocolate off a vegetable peeler, and a tiny pinch of flaky salt. Pour about 2 oz of the hot coffee over each scoop in front of your guests so they see the gelato collapse into cream.
  7. Eat immediately with a small spoon, alternating between the cold center and the warm coffee-cream at the bottom. An affogato has a two-minute lifespan — that's the point.
