Instructions
In a large bowl, whisk the instant pudding mix with the cold whole milk, sweetened condensed milk and pinch of salt for a full 2 minutes, until smooth and noticeably thickened. Let it stand 5 minutes at room temperature to set up.
In a second bowl, whip the cold heavy cream with the vanilla by hand or with a mixer for 2 to 3 minutes, until it holds soft peaks that just flop over. Do not whip to stiff peaks or the pudding will turn grainy.
Stir about one-third of the whipped cream into the pudding to loosen it, then fold in the rest gently with a spatula in 3 or 4 additions until streak-free and mousse-like.
Slice the bananas 1/4 inch thick and toss with the lemon juice. Into six 8 to 10 oz glasses or cups, layer in this order: a spoonful of pudding, 3 wafers, banana slices, more pudding, 3 more wafers, banana slices, then a final layer of pudding. Crumble any leftover wafers on top.
Cover with plastic wrap and refrigerate at least 4 hours, or overnight, so the wafers soften into cake-like layers. Serve cold, straight from the fridge.
Chef's tips
Use bananas that are speckled but still firm — fully brown ones go slimy and watery in the layers.
If your kitchen is warm, chill the bowl and beaters for 10 minutes before whipping the cream; it will hold soft peaks much better.
Make it a day ahead. The texture is best between 6 and 24 hours; after that the top bananas start to darken, so add the crumb topping just before serving.
Swap the vanilla wafers for shortbread cookies or graham crackers — anything crisp and lightly sweet will soften the same way.
