No tempering, no dipping forks — you roll the chilled ganache by hand and finish it three ways, in bitter cocoa, toasted hazelnut, and crushed freeze-dried raspberry, so one batch looks like a boxed assortment.

Instructions

  1. Chop the chocolate as finely as you can with a serrated knife — pieces no bigger than a pea melt evenly and give you a smoother emulsion. Pile it into a medium heatproof bowl along with the salt.
  2. In a small saucepan, warm the cream and honey over medium heat until it steams heavily and just begins to bubble at the edges, about 175–190°F (do not let it boil hard). Pour it over the chopped chocolate, making sure the chocolate is fully submerged. Let it sit undisturbed for 2 minutes.
  3. Using a small silicone spatula, begin stirring in tight little circles in the very center of the bowl. You want a thick, glossy, elastic core to form first; keep stirring in the center and slowly widen the circles outward until the whole mixture is uniform and shiny, about 1–2 minutes. Resist whisking — you are building an emulsion, not adding air.
  4. When the ganache reads about 95–100°F on an instant-read thermometer (it will feel just barely warm), stir in the softened butter a few cubes at a time, then the vanilla. Stir only until each addition disappears; the finished ganache should look like wet satin.
  5. Scrape the ganache into a shallow dish or an 8-inch square pan so it's about 3/4 inch deep. Press plastic wrap directly on the surface and refrigerate until firm enough to scoop but not rock-hard, 2 to 3 hours.
  6. Prepare the coatings while it chills: sift the cocoa into one shallow bowl, put the chopped toasted hazelnuts in a second, and crush the freeze-dried raspberries to a coarse powder with a rolling pin or a few pulses in a spice grinder into a third. Line a sheet pan with parchment.
  7. Scoop the ganache into rough 2-teaspoon portions (a #100 scoop or a melon baller works, dipped in hot water and wiped dry between scoops) and set them on the parchment. Refrigerate the portioned mounds 15 minutes if the kitchen is warm.
  8. Rinse your hands in cold water and dry them thoroughly, then roll each mound between your palms into a ball, working quickly — 5 to 8 seconds per truffle. If your hands get sticky and warm, rinse in cold water again and re-dry. Slightly irregular spheres are the point; these should look hand-made.
  9. Divide the rolled truffles among the three coatings, about 10 each. Toss the cocoa batch in the sifted cocoa until fully coated, then lift them out and roll briefly between your palms to knock off excess so the coating is thin and matte. For the hazelnut and raspberry batches, roll each truffle in the coating and press gently so it adheres.
  10. Set the finished truffles on a clean parchment-lined tray and refrigerate 20 minutes to set fully. Finish the hazelnut truffles with a few grains of flaky salt if you like. Pull the tray out of the fridge 20 to 30 minutes before serving — truffles taste flat when cold and only get that melting texture at cool room temperature, around 65–68°F.
