A tender sour-cream butter loaf layered with a brown sugar–cinnamon ribbon that stays dark and defined instead of sinking into a gummy stripe. A spoonful of flour in the swirl mix and a thick, spoonable batter are the whole trick, and a cinnamon-sugar lid bakes into a fine crackly crust. Dessert warm with vanilla ice cream, breakfast the next morning, griddled in butter the day after that.

Cinnamon Swirl
Loaf Batter
Crackly Top & Optional Glaze

Instructions

  1. Heat the oven to 350°F with a rack in the lower third. Butter a 9x5-inch metal loaf pan, then line it with a parchment sling that hangs over the two long sides.
  2. Make the swirl: in a small bowl, stir together 1/2 cup brown sugar, 2 tablespoons granulated sugar, 1 tablespoon cinnamon, 1 tablespoon flour, and a pinch of salt. Drizzle in 1 tablespoon melted butter and rub with your fingers until it looks like damp sand. The flour and butter are what keep the ribbon from melting into a wet streak — don't skip them.
  3. Whisk the 2 cups flour, baking powder, baking soda, and 3/4 teaspoon salt together in a medium bowl. In a separate small bowl, stir the sour cream and milk together until smooth.
  4. In a large bowl, beat the softened butter and 1 cup granulated sugar with an electric mixer on medium-high for 3 full minutes, until pale and fluffy. Add the eggs one at a time, beating 30 seconds after each, then beat in the vanilla.
  5. Add the flour mixture in three additions alternating with the sour cream mixture in two, mixing on low just until each addition disappears. Stop while a few streaks remain and finish with a spatula. The batter should be thick enough to mound on the spatula — that thickness is what suspends the swirl.
  6. Spoon a third of the batter into the pan and spread it flat. Sprinkle a third of the swirl mixture evenly over it, keeping a 1/2-inch border clear of the pan walls. Repeat with another third of batter and another third of the swirl, then top with the remaining batter, spread smooth, and scatter the last of the swirl mix over the surface.
  7. Drag a butter knife through the loaf in two slow S-shaped passes, going down about three-quarters deep, then stop. Two passes gives you distinct dark ribbons; more turns it into muddy brown cake.
  8. Stir the 2 tablespoons granulated sugar with 1/2 teaspoon cinnamon and shower it evenly over the top.
  9. Bake 35 minutes, then loosely tent the loaf with foil and bake another 25 to 35 minutes, until a skewer inserted at the very center comes out with no wet batter (a smear of cinnamon paste is fine) and the internal temperature reads 205 to 210°F.
  10. Cool in the pan on a rack for 20 minutes, then lift out by the parchment sling and cool at least 1 hour more before slicing — cut too early and the swirl smears. For the glaze, whisk the powdered sugar, 2 teaspoons milk, and 1/4 teaspoon vanilla until thick but pourable and drizzle over the fully cooled loaf.
  11. Slice with a serrated knife in a sawing motion. Serve slightly warm with vanilla ice cream for dessert, or toast leftover slices in butter in a skillet until the cinnamon edges caramelize.
