A whole banana split open in its peel, packed with chocolate chips and marshmallows, then wrapped in foil and set over the fire until everything turns molten. Scoop it out with graham crackers straight from the packet — no plates, no cleanup.
Ingredients
Banana Boat
1 banana
2 tablespoons chocolate chips, or chopped chocolate
12 mini marshmallows
1/2 sheet graham cracker, crushed into crumbs
For Serving
graham crackers, for scooping
Instructions
Lay the banana on a flat surface with the curve pointing up. With a sharp knife, slice lengthwise through the top peel and down into the fruit, stopping before you cut through the bottom peel — you want a boat that still holds together. Gently ease the banana away from the sides of the peel to open up a channel.
Cut the banana crosswise inside its peel into ½-inch slices, keeping the peel intact underneath. This lets the melted chocolate run down between the pieces.
Scatter about three-quarters of the chocolate chips into the opening, tuck the marshmallows in between, and sprinkle the graham cracker crumbs in among them. Finish with the remaining chocolate chips on top. (If you'd rather keep the crumbs crisp, hold them back and add them after cooking.)
Wrap the whole banana snugly in a sheet of foil, sealing the top so nothing leaks. Set it on a grill grate over campfire coals or on a portable stove over medium heat and cook 8–10 minutes, until the chocolate and marshmallows are fully melted and the banana is soft.
Open the foil carefully — the steam is hot — and eat it straight from the peel, scooping with graham crackers.
Chef's tips
Cook over glowing coals rather than active flames. Direct fire scorches the peel before the chocolate melts.
Doubling up the foil makes the packet easier to lift off the fire with tongs and stops it tearing on the grate.
A slightly underripe banana holds its shape better; a very ripe one will collapse into pudding — delicious, but messier to scoop.
Peanut butter chips, chopped nuts or a spoonful of caramel all work in place of some of the chocolate if you're feeding a crowd with different tastes.
