Make Custard Base
  1. In a heavy-bottomed saucepan, combine heavy cream and milk. Heat over medium heat until small bubbles form around the edges and mixture steams (do not boil).
  2. In a separate bowl, whisk egg yolks and sugar until pale and thick, about 3 minutes. Slowly pour 1/2 cup of the hot cream mixture into the yolks while whisking constantly to temper.
  3. Pour the tempered yolk mixture back into the saucepan while whisking. Cook over medium-low heat, stirring constantly with a wooden spoon, until custard coats the back of the spoon and reaches 170°F.
  4. Remove from heat and immediately strain through fine-mesh sieve into a clean bowl. Stir in vanilla and peppermint extracts. Cover with plastic wrap pressed directly onto surface and refrigerate until completely cold, at least 4 hours.
Freeze and Process
  1. Divide chilled custard evenly among 3 Ninja Creami containers, filling each about 2/3 full. Secure lids and freeze for 24 hours until completely solid.
  2. Remove one container from freezer and let sit at room temperature for 5 minutes. Install container in Ninja Creami and process on Ice Cream setting.
  3. After initial processing, create a small well in center of ice cream. Add 1/3 of the crushed candy canes and 1/3 of the chocolate chunks. Process on Mix-in setting until evenly distributed.
  4. Repeat process with remaining two containers. Serve immediately for soft-serve consistency, or transfer to airtight containers and freeze for firmer scoops.
