  5. Gently brush the top of the loaf with milk or water, then sprinkle the reserved rolled oats evenly across the surface. Bake for 32–35 minutes, until the top is deep golden brown and the internal temperature reads 195–200°F on an instant-read thermometer.
  6. Remove the loaf from the pan immediately and let it cool on a wire rack for at least 1 hour before slicing. Cutting into a hot loaf compresses the crumb and makes it gummy — patience pays off here.
