I make this when I want something rich and cozy without much fuss, the sausage and Parmesan make it taste like a hug in a bowl. It's my go-to on cold nights when we need dinner on the table fast.
Ingredients
1 lb mild Italian sausage
8 oz bag spinach, roughly chopped
2 tbsp minced garlic
2 cups low-sodium chicken broth
2 cups half-and-half
3 oz grated Parmesan cheese (I like freshly grated it melts better IMO)
1 package gnocchi
1 tbsp tomato paste
1 tsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp crushed red pepper flakes
1 tsp Italian seasoning
1 tsp oregano
1 tsp dried parsley
1 tsp onion powder
1 tsp garlic powder
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add minced garlic and sauté for about 30 seconds, until fragrant.
Add Italian sausage and cook, breaking it up with a spoon, until completely browned and cooked through.
Add all seasonings and tomato paste. Stir until well combined and cook for 1–2 minutes.
Pour in chicken broth and bring to a boil. Add gnocchi and cook for 3–5 minutes, or according to package directions.
Reduce heat to low and stir in the half-and-half and Parmesan cheese.
Stir in the chopped spinach and allow it to wilt.
Let everything gently simmer for about 10 minutes, stirring occasionally, until the soup has thickened and become creamy.
Serve warm with extra Parmesan on top, if desired. Enjoy!
