I make these when I want that campfire s'mores taste without the fire, all gooey marshmallow, chocolate, and graham cracker crunch in one bar. They're my go-to for potlucks or lazy weekend treats with the kids.
Ingredients
nonstick cooking spray
two 10-ounce bags (566g) miniature marshmallows, divided
6 tablespoons (85g) unsalted butter
1/2 teaspoon pure vanilla extract
pinch of salt
6 cups (about 168g) Rice Krispies cereal
6 full-sheet graham crackers, broken into pieces
3–4 Hershey's milk chocolate bars, broken into pieces, plus more melted for drizzling (optional)
Instructions
Toast the marshmallows: Spread one 10-ounce bag of marshmallows onto an aluminum foil-lined and greased baking sheet. Place under the broiler and toast until golden brown on top. Watch carefully so they don't burn. Remove from oven and set aside.
Melt the butter in a large pot over low heat. Stir in the remaining 10-ounce bag of marshmallows until completely melted and combined.
Remove from heat. Stir in the vanilla extract and salt.
Stir in the Rice Krispies cereal and graham cracker pieces until combined.
Fold in the toasted marshmallows and Hershey's bar pieces.
Press the mixture into a 9x13-inch pan lined with parchment paper. Use a greased spatula or greased hands to press it down evenly.
Allow the bars to set for at least 25–30 minutes. Once set, drizzle with melted Hershey's bars if desired. Cut into 24 squares and serve.
